Favorite Fresh Fruit Recipes


All summer long we have an abundance of fresh fruits available and with some great recipes you will never feel like you are having the same one. Here is one of our favorites using blackberries. Enjoy!

Frozen Blackberry Cobbler Bars

Prep time: 10 mins Cook time: 15 mins Total time: 25 mins


Serves: 16 squares

Ingredients

Crust: 1.5 cups granola 1/3 cup coconut oil 1/2 tsp cinnamon

Filling: 1.5 cups fresh blackberries 2 tbsp coconut oil 2 tbsp maple syrup 1/4 cup fresh lemon juice 2 tbsp shredded coconut 1 tsp vanilla 1/3 cup cashew

Instructions

  1. Heat coconut oil until a liquid and mix with granola and cinnamon in a medium-sized bowl

  2. Line an 8x8 baking pan with parchment paper and press granola mixture firmly until even

  3. Bake at 350 degrees F for 15 minutes, then remove and let cool for 5 minutes

  4. To prepare the blackberry cream layer, blend all "Filling" ingredients together, leaving ½ cup fresh blackberries out to fold in after

  5. Once blended, pour in the last ½ cup of blackberries and stir

  6. Pour entire mixture over the top of the granola base, making sure it's even

  7. Sprinkle with shredded coconut and place in the freezer for at least 3 hours to harden

  8. Remove and cut into squares

  9. Store in freezer
